Fun Food Friday- Strawberry Yogurt Cupcakes

 
Back in August I helped give a bridal shower for my cousin.  I made 2 different cupcakes, a chocolate peanut butter one for the groom's cupcake, and this strawberry yogurt one for the bride's cupcake.  I wanted something light and decadent and this fit the bill.  It was not only really cute, but also really good.  And super easy to make.  I got pink chocolate pearls from Party City to us on the cupcake and I think they turned out quite cute. :) 

Ingredients: Box of Vanilla Cake, Oil (I used Canola but you can also use Vegetable), Eggs (you'll just use the whites), Strawberry Yogurt, Strawberry Pie Filling

For the cupcakes mix together the cake mix...

1/3 cup oil...

3/4 cup water...

3 egg whites...

and one 6oz container of strawberry yogurt

Mix together first for 30 seconds to get it all mixed together, and then for 2 minutes.

Fill cupcakes liners 2/3 full

Scoop about a tablespoon (I used a small cookie scoop) of pie filling right on top of the batter


Bake for 18-22 minutes at 350 until the cake is baked through (sticking a toothpick in the pie filling won't show you if it's done, you'll have to stick it in the side)
 
Frosting Ingredients:  Butter, Shortening, Powdered Sugar, Whipping Cream, Vanilla (guess I forgot to put it in the picture :))
 
To a mixer bowl add butter and shortening...

And mix together...

Until it looks like this

With the mixer on low add the powdered sugar one cup at a time

It will look like this at first.  Turn the mixer on high and walk away for 2 minutes...

Come back and it will look like this, nice and white

Add the whipping cream and beat for 2 more minutes

Then add the vanilla and mix one more time until it's all incorporated
 
To frost it I use the Wilton 1M frosting tip and this is how you make it look like a flower (I forgot to take a video of it when I made these cupcakes so that's why it's a chocolate cupcake :))
 
And there you have it.  I put 3 chocolate pearls in the middle to make it look even prettier :)

And this is what it looks like in the middle with the strawberry filling. 
 
Strawberry Yogurt Cupcakes

1 box vanilla cake mix
3/4 cup water
1/3 cup vegetable oil (or canola)
3 egg whites
1 6oz container strawberry yogurt
1 can strawberry pie filling
Vanilla Buttercream Frosting (recipe below)

Beat together the cake mix, water, oil, egg whites and yogurt on low for 30 seconds or until it's all incorporated, and then on high for 2 minutes.  Pour into cupcake liners (2/3 full).  Scoop a tablespoon of strawberry pie filling on top of batter.  Bake at 350 degrees for 18-22 minutes, until the cake is done.  Cool and frost.

Vanilla Buttercream Frosting
3/4 cup butter, softened
3/4 cup shortening
4 cups powdered sugar
3 TBS whipping cream
1 tsp vanilla

Beat together butter and shortening.  With the mixer on low add in the powdered sugar one cup at a time.  Beat for 2 minutes, scrapping the sides.  Add the whipping cream, beat for 2 more minutes.  Add vanilla and beat until mixed in.
