Ingredients: Chicken (I used frozen but fresh works too, you just wouldn't need to cook it as long), Rotel, Black Beans, Green Chilies, Chili Beans and Taco Seasoning
To a crockpot add 4 chicken breasts...
A can of Chili beans (which are just pinto beans in chili sauce)...
Rotel...
Black Beans...
and Green Chilies...
Doesn't that just look so pretty :)
Sprinkle with a packet of taco seasoning
Stir together
Then just cover and cook on high for 4 hours or low for 8 hours
After that time take the chicken out...
And shred with 2 forks
Return the chicken to the crockpot...
And mix all together
It works great on quesadillas (which is easier for the boys to eat than tacos)
Micah of course doesn't like chicken so he had a cheese and tomato quesadilla, silly boy
I went really healthy an did mine as a burrito on a whole wheat low carb tortilla with lettuce, tomato and a little cheese
It was quite delicious
Steve made tacos with lettuce, tomato, cheese and sour cream
What great looking tacos Steve made. And he said they tasted just as good as they looked! :)
Mexican Crockpot Chicken
4 boneless, skinless chicken breasts, frozen1 can Rotel
1 can Mexican Chili Beans (pinto beans with chili sauce)
1 can Black Beans
1 can Green Chilies
1 pkg Taco Seasoning
Place chicken in the bottom of a crockpot. Add remaining ingredients, mixing together. Cover with lid and cook for 4 hours on high or 8 hours on low (if using thawed chicken cook 3 hours on high and 6 hours on low). Remove chicken and shred. Return chicken to crockpot. Use as taco, burrito or quesadilla filling with lettuce, cheese, tomato and sour cream.
