Fun Food Friday- Pork Chop Casserole

We had a couple from church who had a baby last Saturday.  They had an adorable little girl.  Since Micah was born there have been 10 babies born in church, 7 boys and now 3 girls!  Steve always goes to visit the family soon after the baby is born and I like to go with him and bring the family a meal.  This is a great meal to make for someone because it has your meat, potatoes and vegetables all in one dish!  Just add some rolls and you're good to go! 

Pork Chop Casserole
Ingredients: Pork Chops, Frozen Hash Browns, Cream of Celery Soup, Sour Cream, Milk, Cheese (I used Colby Jack), Frozen Mixed Vegetables, French Fried Onions

Season the pork chops with salt...

and pepper

Add some butter to a hot skillet...

and add the pork chops
(I used 8 pork chops so I browned them in 2 batches)

and cook until nice and brown

In a big bowl add a can of cream of celery soup...

1 cup of sour cream...

1/4 cup of milk...

and about 1 cup of cheese

Stir until all mixed together. 
As you can see my assistant finished his M&Ms and decided to come help Mommy :)

Add a bag of frozen hash browns to the soup mixture
(if you spill some, don't worry, you'll have enough :))

Mix until the hash browns are all covered with the soup mixture

I'm making two smaller dishes, one for us, one for the new parents but you can also make one big 9x13 dish.  Add the potatoes to the bottom of a greased dish...

And spread them out evenly

Pour the bag of frozen vegetables on top of the potatoes...

and spread out

Then add a layer of French fried onions on top of the vegetables

On top of those add the browned pork chops

Then add the rest of the container of the onions 

My goofy boy was very upset when I finally put the dish in the refrigerator, he was a big fan of the French fried onions :)
Bake the casserole at 350 for 45 minutes

After 30 minutes add about 1 cup of cheese to the top of the casserole.
 
And there you have, just add a roll to the plate and you have your full meal of meat, potatoes and vegies!
 
I also always like to make a baby carriage cake, it's so fun to get to make one for a girl! :)
 

 Pork Chop Casserole
8 pork chops
1 bag frozen hash browns
1 can cream of celery soup
1 cup sour cream
1/4 cup milk
2 cups shredded cheese (I use Colby Jack)
1 bag frozen mixed vegetables
1 container French fried onions

Season the pork chops and brown them in a hot skillet with melted butter.  Mix soup, sour cream, milk and 1 cup of cheese.  Add hash browns.  Place in bottom of greased baking dish (either one 9x13 or two 8x8).  Pour bag of vegetables on top of potatoes.  Sprinkle onions on top.  Place pork chops on top of onions.  Top with the rest of the onions.  Bake at 350 degrees for 45 minutes.  After 30 minutes add 1 cup of cheese to the top of the dish.
