Fun Food Friday- Beef & Noodles with Broccoli

Here's another recipe my family has come to enjoy.  It's really easy to make, it just has some resting time.  And it goes great with broccoli.  We love the broccoli at Logan's Roadhouse so I've tried to recreate it at home and came pretty close.  Of course, in order to do that I used a lot of butter. :)  Since we're eating healthier I have substituted olive oil instead and not as much and amazingly, it still tastes pretty good. :)  Enjoy!

Ingredients:  Steak, Steak Seasoning, Onion, Beef Broth, Olive Oil, Egg Noodles

Dice up an onion

Cut up the steak into about 1 inch slices

To a hot pot add about a tablespoon of olive oil

Add the onions...

and steak

Sprinkle in some steak seasoning

Stir until the meat is browned and the onions are translucent

Add 1 1/2 cups of beef broth
Reduce heat and simmer for about 20 minutes (the liquid will reduce by about half)

Then add 1 1/2 more cups of beef broth...

and 1 1/2 cups of water
Add 8 oz of uncooked egg noodles

Push the noodles down into the liquid and boil for 10 minutes

The noodles will cook and start to absorb the liquid

Then just remove from heat, cover and let stand for 15 minutes.

Broccoli ingredients: Broccoli, Olive Oil, Steak Seasoning

To a hot sauce pan add broccoli

Drizzle with olive oil

Sprinkle with steak seasoning.  Mix it around so the broccoli is coated with the oil and seasoning.  Always to cook for a few minutes

Then spread the broccoli out so it's empty in the middle of the pan and pour in a little water (this is to steam the broccoli)

Cover and cook for about 5 minutes

And there you have it, a delicious meal of Beef & Noodles with Broccoli

As you can see Jonathan is a fan mostly of the broccoli :)
Once his broccoli was gone he did eventually eat all the noodles :)

These two boys think alike :)

I guess we just eat broccoli first :)
Beef & Noodles with Broccoli
1 lb beef steak, cut into 1 inch strips
Onion, diced
Olive Oil
Steak Seasoning
3 cups beef broth, divided
8 oz. uncooked egg noodles
1 1/2 cups water
To a hot pot add 1 TBS olive oil.  Then add onions, steak and seasoning.  Stir until the meat is browned and the onions are translucent.  Add 1 1/2 cups of beef broth and bring to a boil.  Reduce heat and simmer for 20 minutes.  Add another 1 1/2 cups of broth and 1 1/2 cups of water, bring to a boil.  Add egg noodles and boil for 10 minutes, stirring occasionally.  After 10 minutes remove from heat, cover and let stand for 15 minutes to let the noodles absorb the liquid.
For the broccoli, add it to a hot saucepan, drizzle with olive oil and steak seasoning and cook for 2 minutes.  Push the broccoli to the edge of the pan and some water to create steam.  Cover and steam for 5 minutes.

  1. Wow! You have three adorable kids who really like eating their veggies. That's quite a feat. I guess it's probably the result of your delicious cooking. Anyway, your take on the beef broccoli in pasta sure looks delicious. Thanks for sharing the recipe and the cute pictures! Happy cooking!
