Fun Food Friday- Wheat Pizza with Creamy Avocado Dressing

These food blogs have been absent for a while for two reasons, I've been busy, but more importantly, since I'm doing this health challenge, I don't make that exciting of meals :). But I did make this wheat pizza with creamy avocado dressing on top that was really good, so I thought I'd share that with you, in case you're looking for a healthy way to eat pizza.

Ingredients: For the pizza- Whole Wheat Flour, Kosher Salt, Honey, Olive Oil, Yeast. For the dressing: Avocado, Garlic, Cilantro, Milk, Lime Juice, Cider Vinegar. (I forgot to put in the other toppings for the pizza which are chicken, cheese, lettuce, tomato and avocado)

For the pizza, sprinkle a heaping 1/2 tsp of yeast onto 1/2 cup of warm water. Let it set for 10 minutes

To a mixing bowl add 1 cup of wheat flour...

1/2 tsp of kosher salt...

and 1/2 TBS honey

turn the mixer on and add 1 1/2 TBS of olive oil

Then add the yeast mixture

Mix together until a soft dough forms

Place the dough in a greased bowl, cover with plastic and let it rise for 1 hour

For the dressing, to a food processor (if you don't have a food processor I'm thinking a blender would work too) add 1/2 a clove of garlic...

1 tsp honey...

1 TBS cilantro...

1/2 an avocado, diced...

1/4 cup + 2 TBS milk...

1 TBS cider vinegar, and 1 TBS lime juice (I guess I forgot to take a picture of that :))

Mix together...

Until nice a creamy

Pour into a container and refrigerate until you're ready to use
 
Once the dough has risen place it on a pizza stone (or baking sheet)...

And roll out. This is actually half a regular recipe (because usually if you're eating healthy you're also not going to eat so much :)), so I just made it into a big rectangle

Drizzle on some olive oil...

And spread all around

Sprinkle on some chicken...

And mozzarella cheese (again, you're trying to be healthy so don't go crazy on the cheese, unless you don't care)

To a bowl add some lettuce, tomato and avocado

Drizzle on some of the avocado dressing...

And stir to coat.

Bake the pizza at 450 degrees for 12 minutes
 
Top the pizza with the lettuce concoction and you have one quite tasty pizza that you don't have to feel guilty about :)
 
Wheat Pizza with Creamy Avocado Dressing
Pizza Dough
1/2 cup warm water
heaping 1/2 tsp yeast
1 cup whole wheat flour
1/2 tsp kosher salt
1/2 TBS honey
1 1/2 TBS olive oil
 
Sprinkle the yeast on top of the warm water, let it proof for 10 minutes. In a mixer bowl add flour, salt and honey. With the mixer on low add oil. Add yeast mixture. Mix until soft dough forms. Place in a greased bowl, cover with plastic wrap and let rise for 1 hour. Roll out, add topping and bake at 450 degrees for 12-15 minutes.
 
Creamy Avocado Dressing
1/2 clove garlic
1 tsp honey
1 TBS cilantro
1/2 avocado
1/4 + 2TBS milk
1 TBS lime juice
1 TBS cider vinegar
 
Puree together in a food processor. Store in the refrigerator.
 
For the pizza top the rolled out dough with diced chicken and mozzarella cheese. Mix together some shredded lettuce, diced tomato and avocado (I use the other half of the avocado I used for the dressing, works out perfect!). Drizzle with the dressing. Place on top of the baked pizza.
