Ingredients: Cooked Brown Rice, Frozen Peas & Carrots, Eggs, Green Onion, Olive Oil, Soy Sauce
In a large skillet heat up 2 teaspoons of olive oil
Add the rice to the skillet
Stir it around to coat with oil. Then spread it out into a think layer over the pan and let it cook for a couple minutes. Stir it and repeat for a couple more minutes.
Add 1 1/2 cups of frozen peas and carrots
Stir it in and cook for 3-4 minutes or until the veggies are soft
Now comes the fun part. Spread the rice/veggies to the outside to create space in the middle of the pan
Crack the eggs into a cup and mix together
Pour the eggs into the middle of the pan (I do it in 2 segments so the eggs don't get all in the rice)
Scramble the eggs...
Until they're all cooked
Then mix them in with the rice (if you're doing it in 2 segments, make space in the middle again and scramble the rest of the eggs)
Add 1/2 cup of diced green onion...
And 1-3 teaspoons of soy sauce, depending on your taste (I'm not a huge fan of soy sauce, so I just add a little)
Stir it all around and there you have it

Vegetable Fried Rice
2 cups cooked brown rice
2 teaspoons olive oil
1 10oz package frozen peas and carrots (about 1 1/2 cups)
3 eggs, lightly beaten
1/2 cup green onion, diced
1-3 teaspoons soy sauce
In a large skillet heat oil. Add rice and fry for about 5 minutes, stirring halfway through. Add vegetables and cook for 3-4 minutes or until they soften. Spread the rice/veggie mixture out to the sides of the pan, leaving space in the middle. Scramble the eggs until firm, mix into the rice. Add the green onion and soy sauce. Give one last stir.
