Fun Food Friday- Grandma's Cheese Dip & Steak Salad

I decided to do a food blog about the other food we had at our Super Bowl party.  So it's a double food day today. 

Grandma's Cheese Dip
The first one is my Grandma Verhoeven's Cheese Dip.  We used to have this at her house on Sundays before lunch and you always wanted to make sure you got there first so it wasn't gone before you had a chance to get some. :)  It's super easy but super yummy!

Ingredients: 1 pound browned Ground Beef (I added some onions to it when I cooked it), 1 pound Velveeta Cheese, 1 jar of Salsa, 1 pkg Taco Seasoning (or 1/4 cup)

I buy the big block of Velveeta cheese because it's only $1 more than the smaller block and then I have enough for more dip later on.  So if you buy the bigger block, cut the cheese in half.

Cut that half into 8 pieces

Put half the cheese into a CrockPot

Then add half the ground beef...

Half the taco seasoning...

And half the salsa (I like to use Medium salsa because it gives the dip a little kick)

Then repeat the layers- cheese...

Put the lid on and cook on low for about 3 hours or high for about 1 1/2 hours, stirring occasionally.

It will end up looking like this.

Steak Salad
One time when I was visiting my family in California my mom, sister and I were coming home from my sister's wedding shower up North and stopped at this restaurant called StoneFire Grill.  We shared this salad that was absolutely amazing.  After I was back in Michigan I wanted that salad again but there isn't a StoneFire Grill out here, so I went on their website and found out what was in the salad and recreated it.  So here you have it!:


Ingredients: Salad kit (the recipe calls for lettuce, carrots & cabbage so I cheated and bought a kit with those in it), extra lettuce, Steak (I used pre-cooked steak strips from Costco, but I've also just bought a steak and grilled it up before), Colby Jack Cheese, Cilantro, Black Beans, Corn, Chips, Mango Salsa (or you can use ranch)

Step one is hard, pour the bag of lettuce in a bowl. :)  I added some more lettuce to make it go further

Chop up some cilantro and add to bowl

Drain a can of black beans and add to bowl

Add some cheese to the bowl.  These steps can be done ahead of time.

Chop up the steak

Right before serving heat some olive oil in a skillet

Grill the corn and steak

Add to the bowl

Add some crushed tortilla chips and mix it all up.  I like to put Mango Salsa on my salad, it's amazing.  I usually make it, but I discovered this Mango Peach Salsa at Costco that is so good, so I just went with that.  You can also use Ranch if you don't want salsa.

The two dishes together, yum! 
Time to go cheer on the Ravens!!! :)

  2. Looks like you had a really tasty Super Bowl Party...and the Ravens won so that made it even more fun! And I'm with Tracie...I think we should definitely have that salad when we come in 2 weeks!! :-)
