Fun Food Friday- Coffee Cake

A lady from church made this coffee cake for a fellowship time after a prayer service and it was so yummy that I just had to get the recipe.  It is so moist (due to the pudding in it) and it's not a heavy dessert.  So after all that heavy holiday food if you're looking for a nice light dessert try this one.

Ingredients: Yellow Cake Mix, Canola Oil (or vegetable oil), Vanilla Pudding (big pkg), Eggs, Butter, Flour, Brown Sugar, Powdered Sugar, Milk

To a mixer bowl add the package of cake mix...

Package of pudding...

2 TBS oil...

1 1/2 cup water...

and 2 eggs

Beat together for 2 minutes

In the meantime you can make the streusel- mix together 1/2 cup brown sugar...

1/2 cup flour...

and 2 tsp cinnamon

Mix together

Then add 2 TBS melted butter

and mix until all combined

Pour 3/4 of the batter into a greased 9x13 pan

Then top with 2/3 of the streusel on top of the batter 

and spread out

Pour the remaining batter and spread...

Then pour the remaining streusel and spread

Bake at 350 degrees for 30-35 minutes or until a toothpick placed in the middle comes out clean

While the cake cools mix together 1 cup of powdered sugar...
 
And 3 TBS milk
 
And mix until smooth

And of course you do this while being shot in the leg with a toy :)

Scrap along the side of the pan to allow the icing to go down the sides

Then just drizzle the icing all over the cake

And then go ahead and enjoy!

Coffee Cake
1 yellow cake mix
1 pkg (large) vanilla instant pudding
2 TBS canola oil (or vegetable oil)
1 1/2 cup water
2 eggs
1/2 cup brown sugar
1/2 cup flour
2 tsp cinnamon
2 TBS butter, melted
1 cup powdered sugar
2 TBS milk

Add to a mixer bowl the first 5 ingredients.  Beat for 2 minutes.  Pour 3/4 of batter into a greased 9x13 pan.  Mix together brown sugar, flour, and cinnamon; add melted butter and stir.  Spread 2/3 of the streusel mix over the batter.  Add remaining batter, add remaining streusel.  Bake at 350 degrees for 30-35 minutes.  Mix together powdered sugar and milk stir until smooth.  Drizzle over cooled cake.
