Fun Food Friday- Scotcharoos

Scotcharoos are one of Steve's favorite treats and amazingly, I had never made them mostly because I had never seen a recipe for them.  But my mother-in-law gave me a recipe book from Steve's old grade school and as I was looking through it I saw this recipe and decided it was high time I made them for my hubbie because #1 they're one of his favorites and #2 they are incredibly easy. :)  Everything is 1 cup except for the Rice Krispies which makes it super easy to remember.  We decided to be nice and take them along on our trip to Wisconsin with Steve's family so we could share.  We also discovered that after a few days they get hard, but if you just cut out the size piece you want and then stick it in the microwave for a few seconds, it's just perfect.  We have a couple at church that when it's their turn to do cookies after church they always do homemade (usually we have store bought) and she a lot of times has Scotcharoos and they are always the first to go.  So if you want to try a delicious treat, try this one out, I don't think you'll be disappointed. 

Ingredients:  Rice Krispies, Sugar, Corn Syrup, Peanut Butter, Chocolate Chips, Butterscotch Chips

In a saucepan combine 1 cup of sugar...

And 1 cup of corn syrup

Heat on medium-low, stirring constantly...

Until it comes to a boil

Remove from heat and add 1 cup smooth peanut butter

Stir until all combined and smooth

In a large bowl add 6 cups of Rice Krispies

Then add the syrup mixture...

And stir until all combined

Pour into a 9x13 pan

And smooth out

To a microwave safe bowl add 1 cup of butterscotch chips...

And 1 cup of chocolate chips

I had a few little guys wanting to be my helper :)

Microwave the chips until melted
(I did mine 2 minutes which was perfect but it could depend on your microwave and bowl)

Stir until smooth

Then pour on top of Rice Krispies...

And smooth out

And there you go, delicious Scotcharoos!

Scotcharoos
1 cup corn syrup
1 cup sugar
1 cup smooth peanut butter
6 cups Rice Krispies
1 cup butterscotch chips
1 cup chocolate chips

In a saucepan bring to boil corn syrup and sugar, stirring constantly.  Remove from heat and add peanut butter and stir until all combined.  Pour over Rice Krispies and stir until combined.  Press down into a 9x13 pan.  Melt butterscotch and chocolate chips together in the microwave, stir.  Pour on top of Rice Krispies.
